This recipe calls for stevia, but it is definitely not necessary!
If you do not think peanut butter needs any added sweetness, then you will be fine to skip the stevia. But if you want your cookie a little sweeter, more like a traditional cookie, you should add the stevia. I use stevia because it is a zero-calorie, zero-sugar, NATURAL sweetener, but you can, of course, sub it for honey, agave, pure maple syrup, etc.
You can also substitute peanut butter for any other nut butter. Almond butter works great, but even cookie butters, or other low-sugar specialty nut butters, will work just fine. If the peanut butter you use is a specialty kind, you probably will not want to add any extra sweetener to the batter.

Ingredients for Healthy Peanut Butter Cookies:
1 cup of natural peanut butter or nut butter of choice
2 large organic eggs
**2 tablespoons of coconut flour IF you use natural peanut butter and your dough is too creamy
1 teaspoon of vanilla extract (optional)
1 tablespoon of stevia (optional
Directions:
Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside. In a bowl, crack two eggs and beat well. Mix in 1 cup of peanut butter, the vanilla extract, and stevia if you are using it as a sweetener. **If you used natural peanut butter and your dough is way too creamy, add the coconut flour. You might need to add another tablespoon or two, depending on your peanut butter.
Also, if you used a liquid sweetener, you will need to add coconut flour. Roll your dough into cookie-sized balls and place them on your baking sheet. Press them flat, and bake for 8-10 minutes or until your kitchen smells amazing and the cookies are golden brown.
